I really liked Double Trouble the one time I had it. I'm really looking forward to trying the Espresso Stout, thanks again. Meeting everyone was a lot of fun.

But Chicago Beer Week is already looking insane. A cask takeover at Fountainhead on Tuesday and a mini-FOBAB at Acre on Wednesday plus the Revolution party on Friday ... not sure if this is going to make the cut.

I'm thinking of bringing Dreadnaught and maybe that barrel aged Central Waters Stout that you wanted to try. Or would you rather have that on another occasion? I can bring Dubhe Imperial Black IPA (http://beeradvocate.com/beer/profile/1416/67046) instead if you like. Or as well.

Yeah I've decided to bust open good stuff anyway - why not?

Bringing the 15 from Flossmoor which has been aged a year - 15% Tripel. Initial reviews where that it was way too hot so we'll see.

Also had a new batch Blushing Monk yesterday - hello tartness. Remember it being a lot sweeter (much closer to an Imperial Rubaeus which was the intention) - but it was delicious.

Belgian style beers are definitely a great conversion for wine drinkers. We definitely can. :)

Unibroue (who makes La Fin Du Monde) make a lot of high quality affordable Belgian styles - I'd recommend try Don De Dieu, Maudite and Trois Pistoles (with Don De Dieu being the most similar).

Speaking of delicious Belgians, the boy and I split a bottle of Dupont's Saison Avec les Bons Vœux ("with good wishes") - it's meant to be opened at midnight on New Year's Eve, but, due to the vagaries of international beer distribution, it just arrived here in Kansas.

Anyway, it was delicious and huge - big nose, big carbonation, big head, big body, big ABV. The only negative for me was not as much spice as I like in a Saison.

We bought two bottles, and I think we'll cellar the second until this NYE.

These bottles, by the way, are a result of a new rule I've instituted for myself: anytime I buy beer, I have to buy at least one imported bottle in addition to whatever American crafts I'm picking up. I've grown to complacent with all of the fantastic domestic options, and I need to keep my palate internationally savvy!

Beer noob question. I was on the Unibroue website and they suggest drinking Lin Fin Du Monde when it reaches a temperature between 53 and 57 degrees, so how long should I keep it out the refrigerator?

So it really depends on how slow you drink your beer. I'd wait at least 5-10 minutes if you are tossing one back on the way out or something. Usually I drink it slow so you can start a little colder than that and have the flavours open up with time as it approaches the right temperature.

More often than not I'll want to drink something not in the fridge so 5 minutes in the freezer gets you close to ideal.

I've, strangely, never had any Unibruoe. So, I went and did a pick six and grabbed one of each Unibroue they had:


La Fin du Monde,
Éphémère (Pomme),
Trois Pistoles,
et Maudite.


I also threw in a New Belgium Blue Paddle (needed a Pils for right now) and a Goose Island Pepe Nero.

I liked it a good deal, though I'd probably rank it third of the three. Very deep flavor, though. The tartness/fruitiness don't overwhelm the malt at all, which was nice.

10 dollar difference between regular and VIP. Not sure how much the food will actually cost.

However, neither of us have guaranteed jobs in Iowa either, but she has been trying to convince Peace Tree to put one or both of us on full time. Not sure if that's gonna happen.

They just show up every now and again and then they are gone. I guess I'd recommend you to pick one up next time. It's just a limited supply issue (not a crazy demand issue).

Usually one bottle limit. I've had the really intense milk stout with cocoa and chile and the very aggressively hopped double stout.

Mine is a couple of simple, wall mounted shelves in my basement, right above the dehumidifier.* The shelves are tall enough to comfortably hold a Magnum upright.

*I know you don't want to over dehumidify corked bottles, but a Kansas City basement needs it. Trust me.
