Had a few of my dad's homebrews today - a black spruce lager (brewed with green spruce tips from a tree in our yard), a fresh hop ale, and a vanilla cream ale. I liked the fresh hop ale best.
Also had a wee dram of 1985 Glenrothes single malt.

Brew day was fun. Started out thinking we'd brew in a bag but couldn't find the mesh bag. Went to home depot and bought a flexible toilet hose with stainless mesh. Ran into another homebrewer in the plumbing section :) Got back and sawed off the connector ends and pulled the hose out, fitted it to valve on the inside of a cooler with some hose clamps and sparged our mash this way. It was pretty badass. Will add the strawberries in about a week.

pretty good trade for me because i can't get the Bells and Darkhorse down here.

I have a question for the beer experts out there:
If I buy chilled beer from the grocery store, bring it home, and store it at room temp for a few weeks before putting it in the fridge, will it "skunk"?

I want to buy 18-24 cans of cheap light beer for the pool, but I don't want to put all of them in my fridge at once. They only sell chilled beer at my grocery store and don't stock it in the warehouse.
scottyh
04-30-2011, 08:52 PM
I think cheap beer is much more likely to go skunk. It really doesn't take much.
Thisismyname
04-30-2011, 08:55 PM
Skunking is caused by light, not temperature.
Having your beer warm up to room temperature will make it taste shittier and shittier the longer you keep unrefrigerated though (even though that's technically not skunking), especially if it was already cold when you bought it.

It's really not a big deal if it has never been refrigerated, but if it has been, it must stay refrigerated. This is easily one of the points my professor was most adamant about.
Also I should point out that I live in Florida. The point it needs to stay under is 70 degrees I believe, or something close to that. 98% of the time in Florida, room temperature is above that.
So yeah, if you're house is cooler than that up there, then it really shouldn't matter.
*Actually, I totally made up the 70 degree figure. Out of my own curiosity, I went to look at my notes and it said that ideally Lagers should be kept 40-45 degrees, Ales 50-55, and Stouts 55-60. Any type of keg should be between 38-40.
This professor also sanitizes all of his beer glasses before drinking out of them, so he's kind of a nutso for detail. I don't think it's THAT big of a deal, but it is preferable.
Driftwood
04-30-2011, 11:55 PM
And the reasoning behind it is? You are right about light causing skunking btw - be wary of green bottles (especially on imports).
Beer is certainly susceptible to temperature changes but you aren't going to "ruin" a beer in the short term unless you leave it in a car in a hot day (might kill the yeast) or if it freezes (carbonation issues). Keeping beer at a higher temperature accelerates the "aging" process so beers where the hops play a central role, you should ideally keep refrigerated if you don't want the hops to fade (though they will no matter what you do). It is only important for "shitty" beers because the lack of malt does not make them good candidates for aging and if you lose whatever hops they originally had - what exactly would you be left with?
The idea of if it is refrigerated in the store, keep it that way makes no sense to me. You have a three tier system - you don't see how the beer was stored where it was brewed, how it was stored at the distributor and how it was stored in getting from one place to the next. The beer has probably been at a range of temperatures during the whole process that you cannot possibly be aware of (with of course some care that it doesn't hit either extreme of far too hot or cold).
Driftwood
05-01-2011, 12:01 AM
Oh ok you edited your post with more info. Those temperatures are basically the ideal serving temperatures. Usually higher alcohol means higher temperature.
Thisismyname
05-01-2011, 12:08 AM
In the short, no it should be fine. That's kind of what I tried to say in my first post (by saying it would get worse as time passed, rather than just saying OHIT'SRUINED), although looking back on it I probably made it sound too important. I'm glad you mentioned the aging, I couldn't remember what exactly the heat did to it. Obviously aging is not wanted (most of the time), so I would say anything the speeds up the aging process is "bad". But of course, it's really not THAT huge of a deal. I mean room temperature is not far off from 60 degrees anyways, where the ideal temperatures begin, so if you aren't storing it for long, you're right it really won't cause a big effect.
Regarding the three tier system, if you buy from an independent retailer who has the beer cold, you would hope it was sent to him cold. I mean, a good amount of beer is shipped in refrigerated trucks. The main problem is most the stores don't have enough cooler space, and then they just put them wherever. If it's a craft beer, chances are it was sent to them cold. Of course, if you're just picking up a 6 pack from 7-eleven, all bets are off, so.
Moral of the story is most of this stuff is suggestive and in the end, really doesn't make that big of difference. So yeah.
*Oh hey you posted again. Yeah, but his thing was you should always keep the beer at the serving temperature. Meh.
**Oh hey I also never really answered your question did I? Why it's worse to warm up already cold beer than it is to keep beer that's already warm. I would assume it matters simply because it's some sort of "shock" type thing. To be honest, I'm not sure on the exact details of that, I just know that was a point my professor was very keen on getting across. Could have been a nut-job, idk, certainly seemed like he knew what he was talking about though.

The Revolution/Firestone-Walker collaboration (http://www.chibeerweek.com/event/release-of-revolution-brewing-and-firestone-walker-collobration) event sounds very appealing, but at Midnight on a weekday, I think I'll have to pass on that one too. I didn't realise that Mikkeller even had a twin until this week, let alone an evil one.
For the price, these were not that good. I had the Yang IPA, a Yin/Yang black and tan and the Before, During and After IPA. The black and tan was probably the best.

They still have all of them. The debut event was last Monday and I went on Saturday.
When you say what style, do you mean what was in it? It was imperial IPA and imperial stout. Evil Twin Yin and Yang were brewed specifically to be mixed together into one.
I was a little mad when they gave it to me and it was all mixed up though rather than stout on top. But whatever.

Well, as peculiar as it may sound, I am self-diagnosing myself with an allergy to hops. I get a terrible migraine after any one beer with a lot of hops (the Noble Pils set me off last night). I never thought it might be an allergy, but after surfing around the web, it looks like this is an actual possibility.
What an unfortunate allergy for someone who enjoys a good microbrew.

Gluten intolerance maybe? Try a gluten-free beer and see what happens.
I don't think it has to do with gluten. I don't have problems with all beer (or any types of wheat based foods); just certain kinds of beer. Which is why I'm attributing it to hops, because not all beers are made with hops, and some are made with a lot more hops than others. I've noticed that the hoppier a beer tastes (Noble Pils, a lot of IPAs, Sierra Nevada Pale Ale, etc.), the more likely I am to get a headache.

Well, maybe "without hops" was the wrong wording, but I know a lot of wheat beers have very little hops, and those have been my favorite and have never led to headaches. And I know that American macro brews have very little hops in them as well, which also don't seem to give me terrible headaches as frequently.

I hope they still have 512 black ipa when you get down here again, drifty.
it seems right up your ally:
An entirely new creation from organic 2-row, organic Crystal 60 and Carafa III, a huskless black malt that gives this beer it’s black color with notes of coffee and chicory without any tannic bitterness. The hop additions are many and generous, featuring Apollo, Horizon, and Nugget, clocking the beer in at 70 IBU. Over 11 pounds per batch of Nugget hops are added directly to the fermenter yielding a resiny herbal and spicy aroma. A hybrid style for dark beer fans who love hops.
I am not usually big on black IPAs, sometimes the bitterness overtakes the hops, but after telling the bartender of my trepidation he assured me I would love it.
He was right.

Going out to my buddy's lake house in Michigan for the long weekend and I'm going to grab a few six packs from Binny's on the way out there. Can I get a few recommendations of your favorite IPAs/Pale Ales that I may not have tried? Or I guess just your favorites, and preferably some that I will probably be able to find.
Anything from Founders, Bells or New Holland that you haven't come accross in Chicago, something like Founders Backwoods Bastard (http://beeradvocate.com/beer/profile/1199/35036)

Where did you get them? Binny's?
I guess they have them at Costco. Haven't been able to find anywhere else online that says where we can get them.

Thanks. I also may try to get a hold of this (http://www.brewbound.com/news/headlines/samuel-adams-latitude-48-ipa-deconstructed-variety-pack-available-this-month/) interesting IPA variety pack from Sam Adams to go with whatever craft stuff I grab.

Doing some planning ahead for Bonnaroo, what do people suggest for good beers that are readily available in cans? Emphasis on the readily available, since I'm currently in Roanoke, where the selection is not that great.

Yuengling, Fat Tire - or PBR!
Yuengling is readily available in TN, and it's probably the best option. Fat Tire, if you can find it, would be great. But more expensive.

I see cans of Fat Tire a lot, that's probably the best beer I've seen in a can.
EDIT: Got ninjaaaaa'd.

Yeah, definitely can get Yuengling.
I'll see if any of the stores around here have fat tire, thanks.
There is one store here that has some good craft beers, and I noticed a couple canned offerings, but holy mother are they expensive.

Yeah, you're not going to find much that's cheap. Even Fat Tire tends to be overpriced when you find it in cans.

The ones this place was selling was around 14 bucks for a 6 pack... is that what I should expect for Fat Tire? If so, Yuengling and PBR here I come!

No - you may be able to find it for about 10 or a little less. It's actually cheaper in bottles typically.

What was in the cans? if it was for a DIPA or RIS that isn't bad at all. But yeah no way should a pale ale or something comparable be going for that price.
